Recipe: Berry Quinoa Porridge
Quinoa porridge is one of those perfect weekend breakfasts. Warm, satisfying, comforting and something that needs to be eaten slowly so you can really enjoy every mouthful! Quinoa is great added to salads, served with a curry or in this case made into porridge! Cook it up a big batch in the weekend and let it last you through the week. Doing this in advance makes this porridge super easy to prepare and can actually be made every morning before work.
- 1/2 cup cooked quinoa
- 1/4 cup frozen mixed berries
- 1 mashed banana
- 1/4 cup coconut or almond milk
Place all ingredients in a small sauce pan, cook over medium heat until all liquid has been absorbed. Place in your serving bowl and top with fresh fruit and chopped nuts.
